Tasting note
An explosive nose of green nettles, green asparagus and pink grapefruit with aromas of dusty fig leaves and black currants awakens the anticipation of what is to follow. The palate won't be disappointed — a delicious continuation of the expressive nose results in a wide, flavoured palate that ends with lemon peel on the finish. The influence of Cape Agulhas terroir is reflected in the salty aftertaste.
Culinary recommendation
This wine goes well with most salads with a vinaigrette, light fish dishes and grilled fish, chicken, pasta Alfredo and tomato tarte tatin. This wine is also the best partner for fresh goat cheese.
Vinification
The grapes are harvested by hand early in the morning at 21-23.5° Oechsle. Winemaking is carried out under reductive conditions using dry ice and carbon dioxide gas. The grapes are crushed with skin contact at 8°C for about five hours before they are lightly pressed. Allow the juice to settle for two days, then strain and add selected yeast. Fermentation takes place at 11°C for around 24 days. Finally, the wine matures for a further four months on fine yeast with a monthly battonage in the tank before it is finally blended and bottled.
