About the wine
This provocative white wine 2021 — De Grendel Sauvignon Blanc is in the truest sense of the word a hit right down to the last drop! Beautiful and graceful landscapes of the coastal region give us these grapes, from which the winemaker from the South African winery De Grendel conjures up this white wine with refinement and experience. Culinary tip from Flaschenpost team: This Sauvignon Blanc is excellent to serve with white meat or goat cheese.

Tasting note
The wine shows an excellent combination of tropical fruits, such as granadilla and guava, and the typical methoxypirazine style, aromas such as green pepper and pepper and fresh asparagus.
Culinary recommendation
The lively acidity makes it the ideal accompaniment to citrus salads, lemon chicken, veal taillard with lime, mussels cooked in tomato concasse, gazpacho or grilled Portuguese sardines with rock salt and plenty of lime aioli.
Vinification
Based on analysis, phenolic ripeness and flavor compositions, the grapes were picked by hand in batches over a period of three weeks. After pressing, the grapes delivered a yield of 630 liters per ton. After 6 hours of skin contact, the juice was settled, bottled and inoculated to ferment in the tank at 14°C for 22 days. 80 days of yeast contact improved the taste and body of the wine, followed by protein stabilization, cold stabilization, blending and bottling.
