Tasting note
Golden yellow. It has intense vibrancy and notes of ripe white peach, candied fruit and toasted almonds. These slowly give way to more intense aromas of thyme and wild herbs against a backdrop of marine notes. Full-bodied, elegant and velvety with pleasant fruity nuances, well balanced by a fine acid trace in a delicately salty texture.
Culinary recommendation
A particularly versatile wine that goes well with blue cheese and medium-ripe cheeses, eggs with truffles, oriental and especially Japanese dishes such as sashimi.
Vinification
Pomice comes from Lipari (Aeolian Islands) and is obtained from 'Malvasia delle Lipari' grapes, which are planted on sandy volcanic soil in a vineyard 350 m above sea level. Thanks to strong temperature fluctuations and soil conditions, it has excellent acidity and excellent minerality. The wine macerates in amphorae with exclusively local yeasts and on the skins for at least 80 days. He then rests in the amphora for another 10 months.
