Tasting note
Salmon-coloured, the wine is very fruity on the nose with mainly peach and citrus aromas. In the mouth, it is fresh and very sweet. It presents notes of grapefruit and white peach. The acidity is well balanced.
Culinary recommendation
It goes well with cold appetizers, pâtés/terrines, pasta dishes, raw sausages and pizzas.
Vinification
The grapes are gently stalked, immediately cooled down to 5°C and pressed. The gentle pressing process takes around 50 minutes, which results in a noble grape must that is rich in aromas. The cooled grape must is decanted at 5°C for two days. The slow and constant fermentation takes around 35 days at a temperature of 17-18°C. Ageing in concrete for 3 months. Acidity 5.87 g/l.
