Tasting note
The Spier 21 Gables Pinotage has an intense ruby red color. The bouquet has a subtle scent of caramelized cherries and a hint of black pepper and black chocolate. A delicious fruit and an elegant taste on the palate. The wine has a pleasant feel of wood and vanilla with a slight spiciness. It is persistently strong, with great length.
Culinary recommendation
Can be drunk now, but can also be stored for up to 7 years. Pair well with a black pepper ostrich steak, pasta with pesto and black olives, or mature cheese.
Vinification
For South African winegrowers, producing a good pinotage is always a particular challenge. Pinotage places particular demands on the quality of the vineyards and the skills of winegrowers. In the Private Collection, the wine should have great intensity and depth, and it is the art of taming the Pinotage grape variety in such a way that it does not become too hard and too dry. Perfectly ripe grapes are therefore an important requirement. This is guaranteed by grapes from Spier's own vineyards in Stellenbosch, where no more than 50 hectoliters of Pinotage are harvested per hectare. The grapes are picked by hand to reach the cellar undamaged and without oxidizing. The Private Collection is made only from the best parts of a vineyard. The fermentation, after a short cold maceration, takes place partly in open containers. The wine is then aged in a mixture of French and American oak barrels. American wood accentuates the bright and intense sweet fruit of Pinotage particularly beautifully and accentuates the character of this grape variety in a special way.
