About the wine

The new 47 Anno Domini winery is designed in such a way that rationality and aesthetics meet in a building that is different from all others. It is a showcase of materials where wood, glass and steel come together to remind us that everything comes from nature. Good taste, design, product innovation and aesthetics are at home here. Traditional grape varieties such as Cabernet Franc, Cabernet Sauvignon, Merlot, Raboso and Glera grow here. Each of them is reinterpreted in different blends, resulting in tasty interpretations. Another product of these grape varieties is Prosecco DOC, the most representative wine in the area, which Anno Domini produces in all its forms: sparkling wine and sparkling wine. Tasting note

Culinary recommendation
Ideal with salmon, freshwater trout and mozzarella.
Vinification
The sparkling base wine is sterile filtered and, after adding the sugar necessary for the second fermentation and specially selected yeasts suitable for the production of sparkling wines, placed in an autoclave to ferment again and achieve the desired overpressure. As soon as the desired pressure is reached, it is cooled to -2-0 °C and matures with the yeasts by short batonnages or stirring the yeast. After 60 days, the wine can be filtered for bottling.
