Vinification
Terres Blanches is a late-ripe terroir that consists of thick layers of clay interspersed with flat, white limestones. This terroir is rich in fossils and white stones, which have the peculiarity that they become whiter when dried in the sun. The terroir of Terres Blanches gives the wines a strong aromatic concentration, tension and ability to age. The grapes from this terroir are harvested late in the season. The grapes are gently pressed in a pneumatic press. Before fermentation, the expression of the terroir is maximized by prolonged contact between the clear juice and the fine yeast grounds. Fermentation at a cold temperature ensures slow fermentation, which reveals the complexity of the wine. The 8-month aging on fine yeast refines the style and improves balance.
