Tasting note
The subtle scents of violet, black cherry and mulberry are followed by spicy aromas of black pepper and fennel. The silky, rich middle palate is supported by concentrated fruit and dense, silky tannins.
Culinary recommendation
Serve this wine with smoked pork belly or a mildly seasoned Indian vegetable curry.
Vinification
The grapes were picked by hand before being stemmed and sorted by hand (to remove green, pink and raisin berries). The fermentation in the tank lasted up to two weeks. Malolactic fermentation and maturation took place for 16 months in 90% French and 10% American 300-liter oak barrels (half first filling, half second filling). The wines have been individually produced to meet the needs of each variety for undivided attention and to ensure that the unique characteristics of the varieties and the expression of the location are brought out to the full. A selective tasting from the barrels determined the composition of the blend.
