Giacinto Lombardo's new cellar is in the former Monastery, which houses the village of Gracciano di Montepulciano dominates. Francesco verzichtet bewusst auf Barriques, die jetzt überall ihren Einzug halten: Gut gereifter Prugnolo gentile (aus dem 17. Jahrhundert stammender Klon von Sangiovese, mit dem sich der Vino von Montepulciano damals den Zusatz "Nobile" verdient hat) bringt von sich aus genug Tannin und eine überaus reiche Aromatik mit, um authentischen Wein zu ergeben und als solcher "ungeschminkt" zu bestehen. Lombardo verwendet für seinen Vino Nobile ausschliesslich Prugnolo gentile, lässt auch die sonst noch gängigen Sorten Mammolo und Canaiolo beiseite, um dadurch an Klarheit und raffiniertem Ausdruck zu gewinnen.
