About the wine
The dominant red wine 2013 — Cabernet Sauvignon is the missing piece of the puzzle in your wine rack. With experience and intuition, the winemaker from the South African winery Neil Ellis masters this red wine in the fertile and graceful landscape of the coastal region. Tasting note
Intense dark color. The nose is restrained, with aromas of black berries, licorice and cedar notes. The palate is dense and fresh, followed by fine, dense tannins. This wine is very long-lived and would be decanted if enjoyed early.
Culinary recommendation
Goes well with dark meat, spicy or game.
Vinification
The vines were planted on southwest-facing slopes on well-drained, decomposed granite soils from the Bottelary hills and the Jonkershoek valley. These vineyards have access to additional irrigation. The destemmed grapes were fermented with regular push overs in stainless steel tanks and macerated before pressing. The malolactic fermentation took place in French oak barrels and the wine then matured for 18 months in 25% new French oak barrels.
