Tasting note
Soft fruit compote, beautifully rounded off with chocolate and coffee notes. The tannin structure is round and soft with a long-lasting aftertaste.
Culinary recommendation
Enjoy it with karoo rack of lamb, beef stews and pasta dishes.
Vinification
The DNA harvest began in March with Merlot and ended with Cabernet. The grapes were picked and destemmed by hand, but not crushed. The destemmed grapes were cooled to 8°C and macerated for 7 days. Fermentation took place at 25°C, followed by a 37-day maceration on the skins. After malolactic fermentation in stainless steel tanks, the wine was kept in 100% new French oak barrels for 16 months.
