Tasting note
White pear, apple juice and a slightly floral aroma set this vintage apart from typical Sauvignon territory, although traces of black currant leaves and fresh pea shoots remain. Wet stone and grapefruit peel make for a focused and structured palate, and the aftertaste is extended by a character of leeks and cardamom cookies.
Culinary recommendation
Fantastic wine with char marinated with orange blossoms, pickled carrots and confit oranges.
Vinification
The Amphora Sauvignon Blanc is part of our Projects Range. These are wines we can rave about - interesting, small batches, slightly quirky but always delicious. The grapes for this wine come from our farm and from a special block in Elgin. The plot is located about 300 meters above sea level, which are also perfect conditions for slow maturation of an aromatic Sauvignon Blanc with excellent acidity. All grapes were pressed as whole bundles and fermented in clay amphorae and then stored for ten months. These locally produced amphorae were developed over ten years. They come in different sizes — between 500 l and 860 l — they are porous, with no inner lining, which forms the perfect amount of microoxidation during maturation.
