Vinification
La Hoz Rosé is an excellent spumante produced according to the classic method from the red grape variety Montepulciano. Michele Bernetti describes his first-class sparkling wine with the attributes “emotion, “courage,” initiative, and “passion.” Characteristics that were needed for the rebellious project to produce a sparkling wine from the Montepulciano grape variety. Character traits and characteristics that can also be used to describe the famous Napoleonic general La Hoz and his deeds. The eponym for this sparkling wine was a hero, defector and robber at the same time and is considered the first Italian patriot. Even before the birth of Mazzini, Garibaldi or Cavour. He fought and died in Ancona in 1799 for the idea of a united Italy. The harvest is done by hand, with small boxes, at the end of August, beginning of September. The vineyards are 100 to 150 meters above sea level and are located in the municipality of Osimo, after Ancona. After destemming, the grapes undergo a very short cold maceration process and then pass through all phases of the production process of classic bottle fermentation. The refinement on the lees takes 30 months for this special rosé. After the dégorgement, the sparkling wine rests in the bottle for another six months before being sold.
