About the wine

If we can offer something special for Easter 2019, it's this distinctive white wine 2017 Sauvignon Blanc 21 Gables. The winemaker from the South African winery Spier Wines has absolutely mastered his craft. Elegance and finesse are the characteristics of this white wine, which originates in the beautiful and sunny landscape of the Coastal region. Culinary tip from Flaschenpöstler: This Sauvignon Blanc can be served very well with goat cheese or white meat.

Tasting note
The Spier 21 Gables Sauvignon Blanc is presented in a beautiful, light straw yellow, which turns lime green at the edge. The great scent of freshly cut grass, peppers, fig leaves and gooseberries alone shows that this white wine is particularly characterized by the green notes for which the Sauvignon Blanc grape variety is known. Aromas of passion fruit successfully round off the first impression. On the palate, the Spier 21 Gables Sauvignon Blanc is particularly impressive with its rich texture and fresh finish.
Culinary recommendation
White wine is a versatile food companion, as it goes well with white meat, chicken or seafood as well as with various types of vegetables, the combination with asparagus in particular is highly recommended.
Vinification
Its place of origin is a 14-hectare vineyard on the cool, southwest-facing Tygerberg Hills in the Cape Town region. The vineyards are dry land and normally receive around 475 mm of rain per year. Specifically, we harvested from a small section at the foot of a slope, where deeper, richer soils offer an equally deep, rich extraction of the aroma. Only the best grapes were harvested by hand early in the morning in 10-kg bar crates and pre-cooled before they were sorted, stemmed and crushed by hand. Contact with the shell was limited to six hours, and the free-range juice was drained to settle overnight before being inoculated with a selected yeast strain. Fermentation took place at controlled temperatures between 11° and 13°C. Before bottling, the wine was aged on the yeast for 4 months.
