Tasting note
This wine offers raspberry, ripe peach and black cherry aromas with subtle oak wood nuances, a warm, juicy palate and a delicate, persistent sweet and sour finish with pronounced acidity.
Culinary recommendation
Goes well with spicy dishes such as green Thai curries or traditional Cape Malay bobotie.
Vinification
The grapes for this wine are harvested from 54-year-old bush vines at the Bottelary Winery. Low yields increase fruit intensity and depth of flavor. These old vines mature more slowly and produce riper fruit and a distinct chalky finish, which is the result of a mixture of granite and red clay. The grapes are crushed and cold mashed for 24 to 48 hours. The wine is inoculated with French yeast strains and fermented in open concrete tanks with manual removal of the pomace lid every two hours for a further 4-5 days. The wine is then removed from the skins and further fermentation takes place in stainless steel tanks. After fermentation is complete, the wine is aged 100% in French oak barrels over a period of 12-14 months.
