Tasting note
On the nose, intense aromas of plums, black cherries, blueberries, violets and notes of black pepper, 5-spice spice, cocoa and thyme. On the palate, a wonderfully balanced wine with plum, black cherry, cocoa powder and black olives, supported by a silky texture, firm but fine-grained tannins and a touch of smoky oak that give it structure and length.
Culinary recommendation
Goes well with goose, lamb and beef dishes.
Vinification
The grapes are destemmed and partially crushed (around 20% of whole berries remain). After a few days, fermentation is started and kept below 30°C. Regular pumping extracts the fine tannins of the grape skin. Malolactic fermentation takes place in the tank during maceration. The wine is stored for 12 to 14 months in a mixture of French barriques and puncheons (50% new).
