Tasting note
Sparkling deep red color, spicy component of black pepper, cardamom and cloves. Ripe red fruits and spices, accompanied by delicate floral notes.
Culinary recommendation
Goes well with morel terrine, porcini mushroom risottos, vegetable lasagna, lamb, venison, beef appetizers, well-aged cheeses.
Vinification
The Cabernet Franc grapes are carefully picked by hand from a loamy limestone vineyard from 2011. The vinification takes place in cement containers, without selected and added yeasts. The wine is aged in barriques for a further 16 months. Acid 5.5 g/l; dry extract 37.2 g/l. The eye is immediately invited by a sparkling deep red color. On the nose, the spicy components of black pepper, cardamom and cloves emerge, spreading gracefully on a background of ripe, fresh fruits with woody notes. Ripe red fruits and spices, accompanied by delicate floral notes, dominate the palate. They determine a complex structure, maintaining an excellent balance between the fruit component and acidity. The palate is long, fresh and intense, with dense, silky tannins that integrate perfectly with the texture of the wine. The result of this symphony is a wine of great taste elegance and power, which is suitable for a long ageing process. It is the perfect embodiment of a Cabernet Franc from the Tuscan coast.
