About the wine
The Château du Donjon, with its centuries-old thick walls, was once a dépendance of the Abbey of the Benedictine monks of Caunes. The estate has been family-owned by the Panis-Mialhe family since the 15th century and has been listed as a stable position of Minervois in French wine guides for many years. The winery, which is completely inconspicuous from the outside and was taken over by Jean Panis from his father, is equipped with the latest cellar technology. He and his wife Caroline launched their first wines on the market in 1996 and have continued to work on their exciting wines ever since with great enthusiasm, knowledge and enthusiasm. The motto of quality over quantity goes without saying here! They are fruit-intensive wines made from ripe grapes, harvested from vineyards from gentle ageing and with low yields (increases the taste density). The ripeness of the grapes in this sunny region often leads to sporting alcohol contents. The alternative would be higher yields or an earlier harvest, so the wines would have less alcohol but also less taste, and they would no longer be “donjons”. And that's why they stay the way they are. And they like it! The wine-growing region of Château de Donjon is located in two large regions, the first in the A.O.C. Minervois and the other in the IGP Coteaux de Peyriac. Since 1999, the estate has also expanded to include the AOC Cabardès and IGP Cité de Carcassonne wine-growing regions.
