Tasting note
Ruby red. Fresh and aromatic, with notes of red and black fruit. Nice substance with charm. Vanilla, with aromas of red fruits and pastries. Fruity, round, with soft tannins and a fine, slightly woody finish.
Culinary recommendation
Ideal with beef, dried duck breast with spices, confit and salad potatoes.
Vinification
The Cuvée Carmin, the pearl of the winery, in turn comes largely from one of the estate's most renowned Syrah sites. Harvest at night to preserve all the aromas of the grapes harvested when they are perfectly ripe. Before winemaking, a single layer selection is carried out in order to fully highlight the grape variety and terroir. When it comes to red wines, we cold macerate before the fermentation starts to extract all fruit aromas. Fermentation is then carried out at a controlled temperature. 14-month storage in barriques.
