Tasting note
The Neil Ellis Jonkershoek Cabernet Sauvignon is Neil Ellis's flagship Cabernet. A wine with an unmistakable balance between elegance and fruit. Intensely dark in color in the glass, there is a deep and complex bouquet of black and blue berries, combined with beguiling aromas of fine cedarwood. Extremely soft and lush on the palate with a fine yet dense tannin structure. Ripe and soft tannins with a hearty expression round off this first-class wine in a wonderful way. An absolute pleasure experience.
Culinary recommendation
Goes very well with strong meats such as venison, lamb or beef.
Vinification
This limited edition wine shows the specificity of certain vineyard sites and represents our best quality. The Jonkershoek Valley and in particular the south-facing slopes are among the coolest locations in Stellenbosch. Fermentation is initiated in stainless steel tanks. The crushed grapes are subjected to a series of pumping processes. Further maceration is allowed before cutting and gently pressing. The malolactic fermentation was completed in new French oak barrels. This wine spent 18 months in 100% new French oak barrels.
